How can I find out the delivery date of the product?
You can check the delivery date of your product on this page .
Please note that delivery dates may vary depending on the product due to manufacturing processes and stock levels.
When using an iron frying pan for the first time, there are many things you should do before cooking, but what should you do when using a ductile pan for the first time?
Before cooking, please season the oil first.
If you do it properly it will be less likely to stick.
Please refer to this page for instructions on how to break in the oil.
Once you have seasoned the oil, you are ready to start cooking.
I would like to know about the heat settings.
1. Start preheating over medium heat.
After 2 to 3 minutes (when a thin layer of white smoke starts to rise), reduce the heat to low.
3. Add oil and spread it over the entire cooking surface.
4. Add ingredients and start cooking. Adjust heat depending on the dish.

The diameters of the ductile pans seem to be slightly different. Why?
The manufacturing method for Iwatetsu ironware, including ductile pans, is a process called "imono" (casting), in which molten iron is poured into a sand mold, and the mold is then broken to remove the product.
We manufacture them to standard sizes, however, as the cooled metal shrinks there will be slight differences in diameter, resulting in individual differences in millimeters.

Can this be used on an induction cooktop?
Yes, all ductile series can be used on induction cooktops.
Why does my ductile pan have a raised center?
This is to accommodate induction heating.
If the product was not made with the center raised, it would have been prone to protruding outward due to the localized heat of the induction heater, and would have rotated, so we have intentionally made the center slightly raised.
The surface seems less rough.
They are made by pouring molten iron into a sand mold, and the rough texture is a transfer of the sand pattern.
The roughness of the surface is one of the characteristics of cast iron, however, there are some pieces that are less rough and some that have traces of molten iron flowing, and due to the manufacturing process, no two products are exactly the same, so we hope you will understand that this is the expression (personality) of the cast iron.
It is not that the surface is less rough and therefore less likely to burn; rather, when the surface is treated to be rust-resistant (nitridation and oxidation), invisible bumps are created on the surface, reducing the contact area with the food and making it easier for oil to soak into the bumps, making it less likely to burn.
Do iron eggs rust?
Iron eggs are not treated to be rust-resistant, so they will rust.
After use, wipe off any moisture while the product is still hot and dry thoroughly.
When storing, avoid high temperatures and humidity, and place on a paper towel or dishcloth to prevent iron marks from appearing in the storage location.
The lid of my ductile pot is loose.
If the fit is too tight, the difference in air pressure may cause the lid to not open or may float.
For this reason, the lid is designed to be heavy and with a little extra room.
It is also possible to use it for waterless cooking, so there is no problem with using it.
I would like to know the recommended amount of oil to use for cooking.
As a guideline for the amount of oil to use after preheating,
Ductile Pan 18 and 22: 2 teaspoons
For Ductile Pan 26 and Ductile Deep 24, use 1 tablespoon as a guideline.

It burns, why?
It is possible that dirt has not been completely removed, the oven was not preheated properly, or there is not enough oil.
If the dirt is not completely removed, food may burn and then more food may burn on top of that.

■ What you should do before using the ductile pan for the first time
Is it okay to grill food using the burner?
It is okay to use a burner to sear the surface of food placed on a ductile pan.
Please refrain from directly heating the surface of the ductile pan as this may exceed the heat resistance temperature.
What lid should I use?
When using commercially available lids, there are differences in diameter due to manufacturing, so if you use a lid that fits snugly, it may not fit.
For this reason, we recommend a lid that can be placed on top.
Does the handle get hot?
Although the handle is integrated, ductile pans can be held with bare hands while cooking.
Heat dissipates through the gap at the base of the handle and the main body, making it difficult for heat to reach the handle.
However, if you cook for a long time or use it outdoors over high heat, it may become hot, so please check the temperature before use.
Furthermore, since the handles of ductile pots are small, they tend to get hot and cannot be held with bare hands.
Please be sure to use mittens or similar protective gear.
Can it be used outdoors?
It can also be used outdoors, such as over a charcoal fire.
However, the heat resistance temperature is 300°C, so if used above that temperature, the surface paint may discolor.
(It is not a coating such as fluorine, but a paint that is harmless to the human body and complies with the Food Sanitation Act.)
Also, the iron surface itself has been treated to make it rust-resistant, so please rest assured that even if the paint is removed, it will not become more prone to rust.
My food has a strong metallic taste.
Because this is ironware, when cooking acidic dishes, boiled fruits, or ingredients with a lot of tannins such as burdock, a lot of iron will be dissolved, resulting in a strong iron taste and the color of the ingredients may change due to a reaction with the iron.
About the balance of the stove trivet
Ductile pans and ductile deep pans with integrated handles have weight in the handles, so the center of gravity balance is adjusted.
However, depending on the size and shape of your stove's trivet, the balance may not be stable.
Please be careful when cooking, especially with small trivets such as portable stoves and camping stoves, as some of them have a shape that makes them difficult to balance.
Regarding how to wash it, what should I use? Can I use detergent or a dishwasher?
After cooking, use a scrubbing pad made for the Ductile Series or a commercially available palm or palm-based scrubbing pad under running hot water to thoroughly remove dirt. Generally, no detergent is used, but if you are concerned, you can use detergent or a dishwasher.
The more you use an iron frying pan, the more it will absorb oil and become easier to use. However, using detergent or in a dishwasher will remove the oil that has absorbed into the pan, so we recommend that you season it with oil before using it again.
The cooking surface has turned reddish brown, is this rust?
It is not rust, but a reddish-brown color caused by a reaction between protein stains and iron.

The outer surface exposed to the gas flame has started to turn whitish. Is this ok?
Since polishing marks and other marks left behind during processing are left behind, the surface is painted with paint that complies with the Food Sanitation Act.
The paint has a heat resistance of 300°C, so if used beyond that temperature, it may discolor.
Please rest assured that the paint is harmless even if it exceeds its heat resistance temperature.
If you are concerned about the appearance, soak some kitchen paper in oil and spread a thin layer on the areas of concern to get a neater appearance.
As the oil oxidizes it will gradually turn black.
After cooking, shiny black spots have appeared on my food. What could they be?
If it feels a little sticky when you touch it with your fingertips, it is likely that oil has been baked on.
This is not harmful and is a common occurrence with cast iron skillets.
It is difficult to remove with normal washing, but if you continue to use it, it will gradually disappear.
(You can also pour oil into a heated ductile pan, turn off the heat, and then hold a paper towel firmly with chopsticks and rub it to remove the oil little by little, but this will require time and patience.)

The color won't go back to when I bought it. Is that a problem?
Iwatetsu Ironware uses paint that is harmless to the human body and complies with the Food Sanitation Act (it does not contain any fluorine).
The more you use iron products, the more the oil will absorb into them, making them easier to use and turning a glossy black color.
Therefore, please note that the color cannot be restored to its original state unless the absorbed oil is completely removed.
