Sometimes we have customers who say this.

It is true that most regular iron frying pans can be used over high heat without any problems. However, the ductile series from Iwatetsu Ironware is made thin, so it conducts heat very well.

Therefore, if you use it on high heat, the heat will be too high and the food will burn before it has a chance to cook .

We do not recommend this as excessive heat transfer may result in deformation.
Please use on medium heat or lower.

Tips for using it well - preheating, heat, oil -

- Preheat over medium heat for 2 minutes, then reduce the heat to low and add 1 tablespoon of oil, allowing it to mix before adding the ingredients (for Ductile Pan 18 and Ductile Pan 22, 2 teaspoons will suffice).

- Even if you change the heat depending on the dish, use medium heat or lower.

If you preheat it over medium heat for 2 minutes, the surface temperature will exceed 250°C, so by adding oil, the overall temperature will calm down and the ingredients will be cooked more easily.

It retains heat well, so you can cook on low heat after preheating.

Also, if the preheating is short and the temperature is low, the food may stick.
It's the same as when you go to a yakiniku restaurant and after changing the grill you're sometimes told not to grill the meat until it's hot.
