Saketo's original recipe "Beef belly stew with tomatoes"
Materials
・Beef belly... 650g
・Tomatoes: 5 (approx. 650g )
・Stir-frying oil…2 tablespoons
・Salt...appropriate amount (1 teaspoon or more to taste)
・Pepper...a little
[Condiments]: 1/2 white onion
Ginger...2 pieces
Garlic…2 cloves
Star anise...2 pieces
Fennel seeds…1 teaspoon
1 piece of cinnamon
Laurel leaf...1-2 leaves
Procedure
1) Prepare the ingredients
- Wash the beef under running water to remove any blood or dirt, then cut it into large bite-sized pieces.
Add plenty of water and beef to a wok and place over high heat. Once boiling, reduce heat to medium and skim off the scum.
After boiling for about 3 minutes, drain in a colander and rinse off the scum under running water.
・Peel the tomatoes and chop them into chunks.
- Cut the white onion into 4cm chunks and lightly crush the ginger and garlic with the flat side of a knife.
2) Stir-fry
- Heat the wok over high heat and mix well with the frying oil, then add the condiments to bring out the aroma.
Add the beef and stir fry, then add the tomatoes and stir fry until the tomatoes break down.
3) Simmer
Pour in enough hot water to cover, turn the heat to high and cover.
Once boiling, reduce heat to low-medium and simmer for 90 minutes, then season with salt and pepper.
Warm advice
・Do not burn the beef
Once cooked, immediately add the tomatoes.
・The finished product has the image of a thick soup.
There's no need to let the juices evaporate.
