Sakuto's original recipe "Mushroom and chicken hotpot (Yunnan style mushroom and chicken hotpot)"
Materials
[Soup]:
・Chicken thighs with bones...2-3 pieces
・Dried mushrooms (1-2 types, such as shiitake mushrooms)…about 20-30g in total
・Fresh mushrooms (4-5 kinds of your choice)…about 400-500g in total
・Salt...appropriate amount (1 and 1/2 teaspoon - to taste)
[Dishes (ingredients)]:
・Your favorite greens (mint is recommended)…as much as you like
・Rice noodles (rice noodles, rice flour, pho) - as much as you like
Procedure
1) Prepare the ingredients
- Soak the dried mushrooms in plenty of water overnight, wash the undersides of the caps under running water and remove the stems.
Strain the soaking water once to remove any sand.
・Cut the chicken into bite-sized pieces.
Add plenty of water and chicken to a wok and place over high heat. Once boiling, reduce heat to medium and skim off the scum.
After boiling for about 3 minutes, drain in a colander and rinse off the scum under running water.
2) Make the soup
- Add enough soaking water to a pot to cover the chicken and dried mushrooms (if there is not enough soaking water, add water).
- Cover and place on high heat, then reduce heat to low and simmer for at least 40 minutes.
-Add salt and fresh mushrooms and simmer for another 20 minutes or so.
3) Prepare the dishes (ingredients)
- Prepare green vegetables (if using mint, remove the thick stems).
-Boil the rice noodles according to the packet instructions.
4) Eat
-Bring the pot to the table and enjoy the soup first, then the mushrooms and chicken.
- Add green vegetables after you have eaten a certain amount of them (if you are using mint, add it little by little and then eat the boiled greens).
・The rice noodles at the end are fine as long as they're warm!
Warm advice
・Enjoy the light flavor
It's definitely more delicious if you don't add too much to it. Just add salt to taste.
