1/2 onion 2 zucchinis 1 each of red and yellow peppers 3 eggplants 3 tomatoes 1 bay leaf 1 clove of garlic Thyme and sage to taste Olive oil to taste Salt and black pepper to taste<How to make>
(1) Finely chop the onion and cut the eggplant and zucchini into 1cm thick slices.
(2) Cut the tomatoes and peppers into bite-sized pieces and cut the okra into 2 to 3 pieces.
(3) Add a generous amount of olive oil to a Dutch oven and lightly fry the eggplant, then remove it from the oven.
(4) Add olive oil again, add the garlic and when it becomes fragrant, add the vegetables other than the tomatoes and continue to stir fry.
(5) Once the oil has been thoroughly distributed, add the tomatoes and herbs (bay leaves, thyme, and sage) and simmer for 12 to 13 minutes.
