Red grilled pork and boiled egg (braised in soy sauce)

Materials

・Pork belly... 500 to 600g

・Eggs…6

・Stir-frying oil…2 tablespoons

・Rock sugar... 40g (you can also use sugar)

[Condiments]

・White onion…1/2

・Ginger...2 pieces

・Star anise…2 pieces

・Cinnamon…1 piece

・Laurier leaves...2 pieces

【seasoning】

・Appropriate amount (1 and 1/2 tablespoons - to taste)

・Shaoxing wine…1 tablespoon

・Salt...a little

Procedure

1) Prepare the ingredients

・Cut the pork into large bite-sized pieces.

Put plenty of water and pork in a wok and bring to a boil over high heat. Reduce heat to medium and skim off the scum.

After boiling for about 3 minutes, drain in a colander and rinse off the scum under running water.

- Hard-boil the eggs, place in cold water and peel.

-Cut the white onion into 4cm chunks and lightly crush the ginger with the flat side of a knife.

2) Stir-fry

- Add oil and rock sugar to a wok and place over low-medium heat, stirring continuously with a spatula.

- Once the sugar has dissolved in the oil and changed color, and bubbles start to pop, immediately add the pork.

- After rolling the pork to give it some color, add the seasonings and stir fry.

3) Simmer

Once the aroma comes out, add the seasonings, pour in enough hot water to cover, turn the heat to high and cover.

Once boiling, reduce heat to low-medium and simmer for 15 minutes, add boiled eggs and simmer for a further 15 minutes.

4) Finishing

Remove the lid, turn the heat to high, and stir occasionally to evaporate the liquid.

Warm advice

・Stir the rock sugar thoroughly until it starts to bubble.

At one point, the oil suddenly turns dark brown and bubbles begin to form.

・Finally, cook over high heat to thoroughly remove all water.

The final image is of a thick sauce that coats the pork and boiled eggs.
