How to make roast beef [ductile pot]

Ingredients and recipe for roast beef
Used rock ironware: Ductile pot 20
(The larger size Ductile Pot 22 is also fine.)
Ingredients (Serves 4)
・Beef thigh chunk 400g
・1/2 teaspoon salt
・A little black pepper
・1 tablespoon olive oil
・4 small potatoes
・1/2 carrot
・4 beans
・3 sprigs of rosemary
Sauce ingredients: 50cc white wine
・1 tablespoon soy sauce
・1 tablespoon sugar
・50g onion
・All meat juice
<How to make>
(1) Bring the beef round to room temperature for at least 30 minutes, wipe off any excess moisture with paper towels, and rub in salt and black pepper.
(2) Wash the potatoes with the skin on, remove the sprouts, and cut them into halves or quarters. Peel the carrots, cut them into 1.5 cm round slices or half moons, and bevel off the edges. Cut the green beans diagonally in half if they are long. Grate the onion.
(3) Heat the olive oil and rosemary in a pan and brown the beef thigh on all sides over medium heat for about 10 minutes.
(4) Wrap it in aluminum foil and place it in the pot for at least 30 minutes. While the beef is cooking, brown the potatoes, carrots, and green beans at the same time.
(5) Remove the roast beef and vegetables. Add the white wine to the pot and allow the alcohol to evaporate.
(6) Add soy sauce, sugar, grated onion, and the juices from the roast beef to a pot and bring to a boil.
(7) Cut the roast beef into pieces, arrange it on top with the vegetables, and pour the sauce over it to finish.
