Smoked beef in a Dutch oven

Ingredients for Smoked Beef
・Beef (thigh meat): 300 g
・A time: 1 g
・A bay leaf: 0.5g
・A Black pepper (whole): 1.5g
・A Cloves (whole): 3 pieces
・A Garlic (sliced): 10 g
・A water: 500 g
・B Rock salt: 130 g
・B Granulated sugar: 75 g
・B water: 2 L
How to make smoked beef
1. Combine ingredients A and simmer for 10 minutes.
2. Put B in a separate pot, bring it to a boil and let it cool.
3. Combine 1 and 2 .
4. Add 3 in an amount equal to the weight of the meat and let it marinate for a day.
*If you soak it for too long, the flavor of the meat will be lost, so be careful not to soak it too long.
5. Drain off the water from step 4 and cook in a Dutch oven over low heat, slowly letting the surface rest and allowing it to cook through.
Put the meat in the Dutch oven and the smoke wood in a container made of aluminum foil, light it and smoke it for about 5 minutes with the lid on. Cut it to your desired thickness and arrange it on the lid of the Dutch oven to finish.
